Scientific Name: Capsicum Annuum

Medicinal Properties
Capsaicin has powerful pain-relieving properties when applied to the skin. It is recommended for
Osteoarthritis and Rheumatoid arthritis, and other joint or muscle pain.
Capsaicin treats residual pain, which in the condition of Shingles is referred to as post-herpetic
neuralgia. It is used for treating various post-surgery pain, chronic and 'cluster' headaches, lower back
pain and muscle soreness. Studies found that capsaicin relieves pain by diminishing the chemical known
as substance P, which transmits pain messages to the brain.

Capsaicin cream is used to reduce itching and inflammation associated with psoriasis.
The herb be used to create a gargle for use to promote circulation and tissue repair in gum disease,
pharyngitis and hoarseness.

Cayenne is sometimes used to assist in weight maintenance programs. Capsaicin as a thermogenic
substance increases the rate of use of calories, particularly of high-fat meals.

Early evidence is encouraging regarding the possible use of capsaicin for stomach ulcers. It improves
blood flow to the heart and enhances circulation throughout the body. Very significant is its use to
assist in cleansing the venous system of plaque. It is an effective and safe stimulant, known to lower
blood pressure and is used as an aid to digestion. Lowers cholesterol and triglyceride levels.

Did You Know? (Background)
Cayenne has a long and rich history. In the Americans it has been used as both food and medicine for
at least 9,000 years. Even with its hot, spicy flavor, primarily due to capsaicin. Capsaicin is known to
stimulates a region of the brain which triggers the lowering of body temperature.

The popularity of cayenne pepper has spread throughout the world. It is a very important spice,
particularly in Southwestern, Mexican, Cajun and Creole cooking, and in the cuisines of Southeast
Asia, China, Southern Italy, and Mexico. Cayenne is also used in traditional Indian Ayurvedic,
Chinese, Japanese, and Korean medicines as a remedy for digestive problems, appetite stimulation,
muscle pain, and frostbite. Today, topical preparations of cayenne are used in the United States and
Europe primarily to relieve pain associated with certain conditions such as arthritis, shingles (Herpes
zoster), and cancer.

Chile pungency was previously expressed in Scoville Heat Units (Scoville 1912). The Scoville
Organoleptic Test was the first reliable measurement of the pungency of chilies. The test employed a
panel of five human representatives, who tasted a Chile sample and recorded the heat level. The
sample was diluted until pungency could no longer be detected. The organoleptic method or taste test
has been the standard method for pungency analysis. Although this method is still widely used, it has
limitations. Tasters must be trained and their ability to test many samples is restricted by the heat of the
test solution. Taster fatigue is a real phenomenon and tasters are also not able to distinguish between
the different capsaicinoids.

Therefore, the Scoville Organoleptic Test has been replaced with instrumental methods, most
commonly the high-performance liquid chromatography (HPLC) which provides accurate and efficient
analysis of content and type of capsaicinoids present in a Chile sample

Safety
There is no known negative safety information available for this herb. Cayenne should not be used by
children under age two years. As with all members of the capsicum family, mucous membrane and skin
irritation is a consideration and caution is to be exerted when handling the material
because not everything can be learned in a book
